Add a Southwestern twist to vegetables and enjoy vegetables with an unusual combination of flavors. This recipe is an excellent source of vitamin C, a powerful antioxidant that helps prevent damage to DNA and cellular structures caused by free radicals.
Prep Time: 20 minutes
Serves 4
1. Slice onion and chop garlic and let sit for at least 5 minutes to bring out their health-promoting benefits.
2. Prepare all the vegetables by slicing and chopping.
3. Heat 1 TBS broth in 11-12 inch stainless steel skillet. Healthy Sauté onions in broth over medium heat for about 5 minutes stirring frequently, until translucent. Add garlic and sauté for another minute.
4. Add zucchini, yellow squash, remaining broth, green chili, and cook for another 3 minutes or so until vegetables are tender, stirring often. Add tomatoes and continue to cook for another couple of minutes.
5. Stir in herbs, salt, and pepper.
Healthy Cooking Tips:
Have all your vegetables cut before you start cooking to avoid overcooking. The zucchini will start to look translucent and will release a lot of water, diluting the flavor of your dish if it is overcooked.

The Rose with its delicate sweet floral scent and timeless beauty is considered the ultimate symbol of femininity, love and romance. From sonnets to all of life’s most cherished moments, no other flower in history has maintained such a regal status. While today there are more than 10,000 cultivated roses grown in many areas, for uses in aromatherapy, Rose Otto from Bulgaria, Turkey and France are highly respected and sought after. In Bulgaria, the Kazanlik Valley of Roses is well known for its Bulgarian Rose Otto and Rose Absolute (Rosa damascena).
Native to the Orient and the Middle East, the Damask Rose (Rosa damascena) with its dreamy pink petals, yields a light pale yellow liquid when steam distilled. It was first distilled and credited to the 10th Century Arabic Physician, Avicenna, who wrote an entire book on its many regenerative properties.
The essential oil is extracted from the petals and is one of the most expensive essential oils. It takes approximately 60,000 roses from the Damask Rose to produce just one ounce of Rose Otto essential oil. It’s aroma is warm, deeply floral, slightly spicy and immensely rich with traces of honey undertones. Rose water is a by-product of this process and also utilized for its wonderful regenerative properties. Rose is used in many face and skin care products for this reason.
The Rose Absolute which is a reddish-orange liquid is processed by solvent extraction and yields a greater quantity of oil. It has a rich, warm, spicy-floral aroma with pronounced honey undertones.
The Rose principal components are citronellol, geraniol, nerol, farsenol, phenyl ethanol, and many others depending on the species and is known to contain more than 300 chemical compounds. Due to the complexity of the rose odor, natural perfumers sometimes utilize both Rose Otto and Rose Absolute to achieve a balance in their creations. Use Rose alone or utilize just a few drops in any blend as a little goes a long way.
Rose has a nurturing and mood uplifting effect on the entire nervous system while restoring a sense of well-being. It is excellent for all types of depression, grief and sorrow, as well as being antibacterial, anti-inflammatory, a gentle sedative, balancing, an aphrodisiac, antiseptic, antispasmodic, and mildy astringent.
